Ingredients

  • 1 lb beef kidney

  • Salt (to taste)

  • 2 cloves garlic, grated

  • 2 stalks green onion (scallion), chopped

  • 2 sprigs thyme

  • 1 small sweet pepper, chopped (set some aside for later)

  • 2 tsp mushroom soy sauce or meat browning

  • 2 tbsp white vinegar (for washing)

  • 1 tsp Maggi all-purpose seasoning

  • ½ scotch bonnet pepper, finely chopped (optional)

  • 1 small onion, diced (for finishing)

  • 1–2 tbsp oil (for sautéing)


Instructions

  1. Clean the Kidney Thoroughly
    Cut away and discard the white fatty part from the kidney. Chop the kidney into small, bite-sized pieces.

  2. Wash the Kidney
    Place the kidney in a bowl and wash it twice with vinegar to remove any residual odour. Drain all excess water thoroughly.

  3. Season the Kidney
    Grate the garlic and finely chop the green onion, thyme, some of the sweet pepper, and scotch bonnet (if using).
    Add these to the kidney along with salt, Maggi all-purpose seasoning, and mushroom soy sauce or browning—just enough to turn the meat a rich brown color.
    Let it marinate for at least 30 minutes (overnight for best flavour).

  4. Braise the Kidney
    Heat oil in a skillet over medium-high heat. Once the oil is hot, add the seasoned kidney and stir continuously for a few minutes until the meat is fully braised and browned.

  5. Simmer Until Tender
    Reduce the heat to medium. Cover the skillet and cook, occasionally tipping in small amounts of water to prevent drying out. Continue until the kidney is tender and the flavours are well blended—about 30–40 minutes total.

  6. Add Fresh Onion and Sweet Pepper
    Once the kidney is fully cooked and tender, turn up the heat slightly, add the diced onion and remaining sweet pepper, stir gently, and cover the pot. Let it steam for 2–3 minutes to finish with a fresh, aromatic touch.
